Allergies&FoodSensitivities

Around 20% of the population in industrialised countries is affected by food intolerances — yet only a fraction are true allergic reactions. Precise diagnosis makes all the difference.

Understanding Food Reactions

Food sensitivities — also known as non-allergic food hypersensitivities — are adverse physiological responses to certain foods that do not involve the immune system in the same way as true food allergies. They are caused by enzyme deficiencies, chemical sensitivities, or irritants within the food itself.

Many people experience symptoms repeatedly after eating certain foods — severe migraines, gastrointestinal discomfort, rashes, or fatigue — but the underlying mechanism differs significantly between individuals, making accurate diagnosis essential.

Allergy or Food Intolerance?

The distinction lies in how the immune system is involved. Some individuals experience both types simultaneously — making an interdisciplinary diagnostic approach essential.

Food Allergy

MechanismIgE- or IgG4-mediated immune response
OnsetRapid — within minutes of ingestion
ThresholdTriggered by even trace amounts

Symptoms

  • Hives and skin redness
  • Swelling of lips/throat
  • Wheezing and breathing difficulty
  • Vomiting
  • Anaphylaxis (life-threatening)

Common Triggers

Children: peanuts, eggs, milk, fish, wheat · Adults: wheat, shrimp, hazelnuts, soy, celery, peanuts

Food Sensitivity / Intolerance

MechanismNon-immunological — enzymatic or chemical
OnsetDelayed — hours or days after consumption
ThresholdDose-dependent; small amounts may be tolerated

Symptoms

  • Bloating and digestive discomfort
  • Headaches and migraines
  • Fatigue
  • Skin rashes or itching
  • Diarrhoea

Common Triggers

Lactose, fructose, gluten, histamine, food additives, naturally occurring chemicals

Common Types of Food Intolerance

Non-immunological reactions to food are far more common than true allergies — and each has a distinct mechanism that requires a different diagnostic and therapeutic approach.

Lactose Intolerance

A missing, defective, or down-regulated enzyme leads to inability to absorb lactose. The intestinal flora then ferments the lactose — producing substances that cause typical digestive disorders.

Fructose Intolerance

Impaired absorption of fructose results in unpleasant gastrointestinal reactions including bloating, cramps, and diarrhoea after consuming fructose-containing foods.

Histamine Intolerance

High-histamine foods — aged cheeses, smoked fish, red wine, sparkling wine — trigger pseudo-allergic reactions including rashes, diarrhoea, and migraines in sensitive individuals.

Celiac Disease & Gluten Intolerance

An immune-mediated reaction to gluten that damages the small intestinal lining — distinct from non-coeliac gluten sensitivity, which involves delayed immune and non-immune mechanisms.

The GIMC Approach

Precise Diagnosis. Personalised Treatment.

As specialists for food intolerances and allergies, we focus on differentiating between immunological and non-immunological reactions. Our interdisciplinary team works collaboratively to uncover root causes — through a comprehensive 6-step diagnostic process.

01

IgE & IgG4 Allergy Testing

Comprehensive blood testing for immediate (IgE-mediated) and delayed (IgG4-mediated) food and inhalatory allergen reactions.

02

Lymphocyte Transformation Test (LTT)

Cellular sensitisation testing to identify delayed-type hypersensitivity reactions to specific foods and chemical substances.

03

Intolerance Testing

Oral challenge and blood tests for lactose, fructose, and histamine intolerances — identifying non-immunological triggers.

04

Food Challenge Procedures

Supervised oral food challenges to confirm or exclude specific food triggers under controlled clinical conditions.

05

Elimination Diets

Structured removal of suspected trigger foods, followed by systematic reintroduction — to precisely map individual reaction patterns.

06

Microbiome Analysis

Evaluation of intestinal flora — since an abnormal microbiome can independently process food components and generate intolerance-like reactions.

The 4-Day Personalised Hypoallergenic Rotation Diet

No two patients have the same spectrum of allergies and sensitivities against foods. Only a personalised diet — taking into account all individual reactions — can ensure long-term symptom freedom by strongly reducing inflammatory reactions in the gut, lungs, and on the skin.

Over more than 30 years, our German team developed a personalised hypoallergenic rotation diet that eliminates the incriminated food allergens and offers tolerated foods in a structured 4-day rotation system — preventing the development of new sensitivities.

Day 1

Tolerated foods Group A

Day 2

Tolerated foods Group B

Day 3

Tolerated foods Group C

Day 4

Tolerated foods Group D

"As there are no two patients with the same spectrum of allergies and sensitivities against foods, it is easy to understand that only a personalised diet taking into account the above-mentioned reactions can ensure long-term symptom freedom by strongly reducing inflammatory reactions in the gut, lungs or on the skin."
